How to brew a V60 that tastes like ours

We brew every coffee on the shelf as a V60 before it leaves the roastery, on the same recipe, every time. Not because it is the only way — but because a fixed recipe is the only honest way to taste what changed: the coffee, the roast, the water. This is that recipe. It needs a V60, a rinsed paper filter, a scale, and six minutes of your attention.

The recipe: 15g of coffee, ground medium-fine — think coarse sand, not powder. 240g of water at 94°C, which for most kettles means about a minute off the boil. Start your timer as you pour the first 50g and let it bloom for 45 seconds; the grounds will swell and bubble as they release CO2. Then pour the remaining water in two even, slow spirals — up to 150g by 1:15, up to 240g by 1:45. Total brew time should land around 2:45. If it runs long, grind coarser; if it gushes through early and tastes thin, grind finer.

Three habits matter more than any gadget. First, rinse the filter with hot water and dump the rinse — papery notes are real, and so is a cold brewer. Second, pour in circles the size of a coin, not a dinner plate; the goal is to keep every particle of coffee doing equal work. Third, taste it twice: once hot, once after five minutes. Good coffee gets sweeter and more articulate as it cools. If it only tasted good scalding, something is hiding.

A word on water, because it is 98% of the cup: if your tap water tastes good to drink, it will make good coffee. If it tastes like a swimming pool, filter it. Chasing mineral recipes comes later, if ever.

That's the whole thing. One recipe, three habits, no gadgets you don't already own. Brew it the same way ten times and you will learn more about coffee than any tasting wheel can teach you.
